Hi Brad,
I didn't realize you were not clicking the executable. You solution makes sense.
Put put an startup icon on the desktop, right click the executable file and create a shortcut. Then drag the shortcut to the desktop.
You can also right-click on the the executable and select "pin to taskbar" to place an startup icon on the taskbar.

For the greater good, and anyone else who might stumble upon the same situation, here's what worked.
I had saved the .zip file and extracted it right to a desktop folder "AstroImageJ" The problem was the little Saturn icon. There are 2, and I created a shortcut using the one that's a 196 KB application. Double-clicking on that icon only opened up ImageJ,
with no plugins, and no ability to update etc...
What does work is double clicking on the 7,102 KB ij Java executable icon, and then everything worked fine. I'm not sure how to get a desktop icon to work, but that's just window dressing at this point -- the program is intact, and works just fine.
I worked with a colleague who had similar problem, but he had not completely extracted all the files, so he was clicking on a 2MB file; once extracted, he could find the 7MB executable file and it seemed to work fine for him.
