Hi,
I suspect this may be a result of the general problem of not being able to directly enter text into certain AIJ dialog boxes on Macs run OSX 10.13 and later. See this post on the AIJ forum:
http://astroimagej.1065399.n5.nabble.com/Text-box-incompatibility-with-Mac-OSX-10-13-td853.html
Could you check and see if one of the workarounds list there solves this problem?
If this is the cause, I have a volunteer that has started an update to a new version of java and underlying ImageJ version, which is required to fix the text box problem. It's a big job and he's had to put the project on hold due to teaching duties this semester,
but maybe we will get this Mac-specific problem fixed soon.

Bug Report: Mac OS X 10.14.3, AIJ 3.2.0.
I want to resize an image, so I select Image | Adjust | Size and the dialog pops up where I could enter the new width and height. However, the values shown (1002 x 668) are not editable. I can change the image to that size but no other. I assume this is
a bug in the Mac version, because I've seen it done in the Linux version.
