Is there a specific way to cite the manual?/ Who are all of the authors?

If you are referring to a general AstroImageJ citation, please use the one listed at the top of the main user forum page. If you are referring to a specific manual, let us know which one.

I think the best approach is to reference AIJ as mentioned at the top of the main User Forum page, and then if you want to specifically call out those documents, list them by name and include a link to them in a footnote (since they are not peer reviewed publications).
